Favorite Pecan Pie - Diamond Nuts

Ingredients

• Homemade Pie Crust (my recipe makes 2 crusts; you can halve the crust recipe or freeze the 2nd half)
• 2 1/2 cups coarsely chopped Diamond of California pecans (a very rough chop!)
• 3 large eggs
• 1 cup dark corn syrup
• 1/2 cup packed dark brown sugar
• 1 1/2 teaspoons pure vanilla extract
• 1/4 cup unsalted butter, melted and slightly cooled
• 1/2 teaspoon ground cinnamon
• 1/2 teaspoon salt
