• 1 Tbsp Olive Oil (for roasting)
• 1/2 tsp Coarse Sea Salt
• 1/4 tsp Black Pepper
• 16 oz Full-Fat Cottage Cheese, drained
• 1/2 cup Fresh Parsley, roughly chopped
• 2 Tbsp Fresh Dill, finely chopped
• 1/2 cup Walnuts, roughly chopped
• 4 Tbsp Extra Virgin Olive Oil (for vinaigrette)
• 2 Tbsp Red Wine Vinegar
• 1 tsp Dijon Mustard
• 1 tsp Honey or Maple Syrup
• Salt & Pepper to taste
