• 1 tablespoon oregano leaves
• 1/2 cup fresh flat-leaf parsley leaves, roughly chopped
• 1/2 cup fresh mint leaves, roughly chopped
• 400g can chopped tomatoes
• 1/2 cup white long-grain rice
