- 175g packet Minicaps® baby capsicums, halved lengthways, cored
- 350g butternut pumpkin
- ¼ cup (60ml) olive oil
- ½ cup (125ml) chipotle sauce
- 2 corn cobs, peeled, each cut into 4 pieces
- 1 medium red onion, cut into wedges
- 500g chicken tenderloins, tendon removed (see tip)
- 1 lime, cut into wedges
- Coriander leaves, avocado & sour cream, to serve
