• 3 cups fresh baby spinach
• 1 tablespoon apple cider vinegar
• 1 1/3 cup vegetable stock or water
• 3/4 cup cooking cream or coconut milk
• 1/3 cup basil pesto
• 1 cup grated cheddar cheese
• Lemon wedges, to serve
