Mediterranean Orzo Spinach Salad with Feta Cheese

Ingredients

• 2 cups raw spinach (organic is best)
• 1 cup orzo pasta (uncooked)
• 1/4 small red onion, finely chopped
• 1/4 cup kalamata olives, chopped
• 1/4 cup feta cheese, crumbled
• 1/8 cup red bell pepper, finely chopped (organic is best)
• 2 tablespoons light olive oil
• 1 teaspoon lemon juice (fresh squeezed)
• 1 teaspoon sea salt
• 1/8 teaspoon Herbs De Provence
