Ingredients

• Olive oil
• 2 sausages
• 1 tsp butter
• 1/2 leek, finely sliced
• Salt
• 1/2 tsp fennel seeds
• 1 bay leaf
• Grating of nutmeg
• 2 tsp plain flour
• 220ml whole milk
• 1/2 tsp wholegrain mustard
• 80g cheese (a mix of strong cheddar and mozzarella), grated
• Pepper
• 200g cauliflower, chopped into small florets
