Jairzeno's Lime & Passion Fruit Mini Rolls recipe - The Great British Bake Off
A mini roll, but not as you know it – this one is reinvented with tropical flavours. Take your time with the baking and rolling and follow the method carefully
Ingredients
- 8 passion fruit, halved and pulp scooped
- 75g caster sugar
- 75ml double cream
- 8 large eggs, separated
- 160g caster sugar
- juice and finely grated zest of 2 unwaxed limes
- 80g plain flour, sifted
- ½ tsp salt
- icing sugar, for dusting
- 40g golden syrup
- 60g caster sugar
- 2 large egg yolks
- 150g unsalted butter, softened
- passion fruit caramel (from above)
- 450g caster sugar
- 400g milk chocolate, broken into pieces
- 600ml double cream
