Harira | Club House
This traditional Moroccan soup is often eaten to break the fast during Ramadan. It may be prepared with lamb, chicken or beef.
Ingredients
- 2 tbsps (30 ml) olive oil
- 1 large onion chopped
- 1 tsp (5 ml) cinnamon ground (club house)
- 1 tsp (5 ml) cumin ground (club house)
- 1/2 tsp (2 ml) pepper coarse black (club house)
- 1/2 tsp (2 ml) organic ground coriander (club house)
- 1/2 tsp (2 ml) paprika (club house)
- 1/2 tsp (2 ml) turmeric ground (club house)
- 1 1/4 pounds (625 ml) boneless skinless chicken thighs cut into 1/2-inch (1cm) cubes
- 1 1/2 tsps (7 ml) salt
- 4 cups (1 liter) Chicken Stock
- 2 cups (500 ml) water
- 1 can (796 ml) crushed tomatoes
- 1 can (540 ml) chickpeas, garbanzo beans, drained and rinsed
- 1/2 cup (250 ml) lentils, picked over and rinsed
- 1/2 cup (250 ml) long grain rice
- 1/4 cup (60 ml) chopped fresh cilantro
- 1/4 cup (60 ml) chopped fresh parsley
