Ingredients

• 1/4 c unsalted butter
• 3 Leeks, finely chopped
• 1 Clove garlic, minced
• 1/4 c all-purpose flour
• 2 c TURKEY BROTH
• 1 tsp dried tarragon
• 2 tsp lemon rind or zest, grated
• 1/4 c cream or whole milk
• Salt and freshly ground black pepper To Taste
• 1 lb COOKED TURKEY, diced
• 1/2 c frozen peas
• Non stick cooking spray As needed
• 3 Medium Russet potatoes, washed well and cut in half
• 1/2 tsp salt
• 1/4 tsp freshly ground black pepper
