Spanish-Style Croquetas

Ingredients

• 1 pint whole milk
• 140g good-quality vegetable stock
• 70g butter
• 1 tbsp La Española Light In Colour Olive Oil
• 1 onion, finely chopped
• 1 clove garlic, finely chopped
• 130g plain flour
• Freshly grated nutmeg
• 140g baby leaf spinach, blanched, squeezed dry and chopped
• 2 tbsp toasted pine nuts
• 115g Iberico cheese, grated
• 2 large free-range eggs, beaten
• 115g dried panko breadcrumbs, made from stale white bread
• 2 pints La Española Mild & Light Olive Oil, for deep-frying
