Ingredients

• 1 onion, chopped
• 3 tablespoons (45 ml) olive oil
• 2 lbs (1 kg) ground beef
• 1 can 48 oz (1.36 litres) tomato juice
• 4 cups (1 litre) carrots, peeled and cut into 1/4-inch (1/2-cm) thick slices
• 5 cups (1.25 litres) potatoes, peeled and cut into 1/4-inch (1/2-cm) thick slices
• Salt and pepper
