• 800g diced Beef Knuckle
• 1 onion, diced
• 1 carrot, diced
• 1 celery stalk, sliced
• 2 garlic cloves, finely diced
• 1 tbsp flour
• 2 cups beef stock
• 1 cup water
• 2 tbsp tomato paste
• 3 tsp Worcestershire sauce
• ¼ cup parsley leaves, chopped
• Sea salt & freshly ground black pepper, to taste
• 800g dutch cream or sebago potatoes, peeled and diced
• 70g butter, diced
• 150ml warm milk
