- 500ml of vegetable stock
- 1 fresh bay leaf
- 1 sprig of lemon thyme, large

- 200g of baby chestnut mushrooms, quartered
- 1 tbsp of shallots, chopped

- 25g of clear honey
- 1 pinch of Chinese five-spice powder
- 15g of Dijon mustard
- 12g of balsamic vinegar
- 25ml of white wine vinegar
- 5g of soy sauce
- 100g of light olive oil
- 4 radishes, finely sliced
- 2 spring onions, finely sliced
