Ingredients

• 1 egg, beaten
• 1 tablespoon of honey
• A pinch of salt

• 1½ teaspoons of cornstarch
• 2 tablespoons of brown sugar
• ¼ teaspoon of ground cinnamon
• 1 tablespoon of granulated sugar
• 2 tablespoons of water, ice-cold
• Toasted walnuts, chopped, for garnish
• ¾ cup plus ½ tablespoon of all-purpose flour
• 1 tablespoon of turbinado sugar
• 1 large pear, peeled, quartered & thinly sliced
• 6 tablespoons of unsalted butter, cold, cut into ½-inch pieces
