• 1 sprig fresh Thyme
• 1 each Bay Leaf
• 1 ½ cups Half-and-Half
• 4 each Large Eggs, room temperature
• ½ teaspoon Kosher Salt
• ¼ teaspoon Cayenne Pepper
• 1 pinch freshly ground Nutmeg
• 1 ounce Cheddar Cheese, finely grated
