Sausage Meatball & Penne Pasta Bake | NZ Pork

Ingredients

• 750g New Zealand pork sausages, good quality
• 400g penne pasta
• 4 Tbsp olive oil
• 1 onion, finely chopped
• 3 cloves garlic, minced
• 6 sprigs thyme, leaves picked and roughly chopped
• 1 sprig rosemary, leaves picked and finely chopped
• 2 tsp fennel seeds, toasted and crushed
• ½ tsp Worcestershire sauce
• ½ tsp soy sauce
• 2 Tbsp tomato paste
• 400g can chopped tomatoes in puree
• 2x fresh tomatoes
• 150g mozzarella (we used Buffalo)
• 1 cup grated parmesan
• 3x big handfuls of baby spinach (approx. 75g)
