Ingredients

• 2 tbsp Urban Meadow Pure Olive Oil (divided)
• 3 cups fresh corn (3 ears cut off the cob yields 3 cups)
• 1 medium shallot (chopped)
• 1 clove garlic (minced)
• 1/2 cup light sour cream or plain Greek yogurt
• 4 oz. (1/3 fat) cream cheese (4 ounces = 1/2 package)
• 1 cup grated Urban Meadow Cotija Cheese + extra for topping
• 1/4 tsp each of sea salt and ground pepper
