Ingredients

• 2 tbsp Olive oil
• 1 Red onion, thinly sliced
• 3 Cloves of garlic, minced
• 1 Courgette, thinly sliced
• 1 Red sweet pepper, thinly sliced
• 1 Yellow sweet pepper, thinly sliced
• 1 cup Sliced mushrooms
• 1 cup Spinach leaves
• 1 Can of crushed tomatoes
• 1 Everyday Favourites chopped tomatoes
• 2 tbsp Tomato paste
• 1 tsp Everyday Favourites dried basil
• 1 tsp Everyday Favourites dried oregano
• 250g Pasta
• 200g Sheese grated mozzarella
