• 3 Carrots - peeled & cut Julienne
• 2 Red onion - chopped
• 3 Celery ribs - slice thin
• 2 Granny smith apples - cored Sliced
• 2 cups 125g / 4.4oz Currants
• 1/2 cup 118ml Apple juice
• 1/4 cup 59ml Apple cider vinegar
• 1/4 cup 59ml Honey
• 2 tablespoons 30ml Dijon mustard
• Chopped basil
• Salt and pepper to taste
