Ingredients

  • 2 tablespoons Bartenura Extra-Virgin Olive Oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1/2 jalapeño pepper, seeded and finely chopped
  • 2 medium white potatoes, diced
  • 2 leeks (white part only), well washed and cut into 1/4 inch-thick rounds
  • 1 can (28 ounces) whole Italian plum tomatoes, drained and coarsely chopped
  • 4 cups Vegetable Stock or store-bought low-sodium vegetable broth
  • 1 and 1/2 cups Baron Herzog Chenin Blanc or other dry white wine
  • 2 teaspoons salt, plus more to taste
  • 1 pound fresh salmon fillets or steaks, skinned, bones removed, and cut into 1-inch chunks
  • 1 cup fresh corn kernels (from 2 ears corn)
  • 6 white mushrooms, sliced
  • 1 cup half-and-half
  • 1/2 cup finely chopped fresh cilantro
