S & J's Famous Spaghetti Sauce

Ingredients

• 4 Pounds Italian sausage Mild hot or combo
• 2 tablespoons Extra virgin olive oil
• 2 large Onions Chopped
• 1 Large Green pepper Chopped
• 1 Cup Celery Chopped
• 6 cloves Garlic Minced
• 8 oz Canned mushrooms stems and pieces chopped
• 3 28 oz cans Petite diced tomatoes
• 2 29 oz can Tomato sauce
• 4 6 oz cans Tomato paste
• 4 cups Water
• 3 Tbl Basil
• 3 Tbl Parsley
• 2 Tbl Brown sugar
• 2 Tbl Oregano
• 2 Tbl Celery salt
• 2 Tbl Cumin
• 2 Tbl Fresh ground pepper
• 1 Cup Red wine Better quality best
