Ingredients

• 30 ml (2 tablespoons) of olive oil
• 10 slices of pancetta or bacon
• 1 chopped onion
• 2 stalks of chopped celery
• 454 g (1 lb) of chicken cubes
• 3 peeled and cubed potatoes
• 250 ml (1 cup) of whole grain corn
• 500 ml (2 cups) of milk
• 750ml (3 cups) of homemade chicken broth
• 250 ml (1 cup) of 35% heavy cream
• 5 sprigs of fresh thyme
• 3 bay leaves
• 30 ml (2 tablespoons) of Dijon mustard
• Salt and pepper to taste
