Ingredients

• ½ cup pancetta, cut into ½-inch pieces
• 1 tablespoon olive oil
• ½ cup chopped scallions or sweet onions
• ¾ pound shrimp, peeled and halved lengthwise
• 2 large eggs
• ½ cup plus 2 tablespoons freshly grated Parmigiano-Reggiano cheese
• 8 ounces bowtie pasta or spaghetti
• Freshly milled black pepper
• 2 tablespoons sour cream or heavy cream (optional)
