Bombay Potatoes –
These potatoes make the perfect side dish to any Indian meal. Also known as Bombay Aloo, they make a regular appearance at our dinner table.
Ingredients
- 2 tbsp ghee or oil
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 2lb baby potatoes (washed)
- 3 garlic cloves (crushed)
- To taste salt
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp red chilli powder
- 1/2 tsp tumeric powder
- 240ml water
- Juice of 1/2 lemon
- 32 oz baby potatoes (washed)
- 1tsp cumin powder
- 8.4oz water
- Step 1 Press Saute to pre heat the Ninja Foodi Multi-Cooker
- Step 2 Once hot, add oil or ghee
- Step 3 Add the cumin seeds and mustard seeds, saute for 30 seconds or until you can hear crackling
- Step 4 Add the potatoes, garlic and salt. Saute for 8 – 10 minutes
- Step 5 Pierce the potatoes slightly using the tip of a knife
- Step 6 Stir in the coriander, cumin, red chilli powder and turmeric and quickly stir to coat. Then pour in the water
- Step 7 Assemble the pressure cooking lid and place it to the lock position. Press manual and pressure cook for 11 minutes
- Step 8 Use the quick pressure release function by pressing cancel, and carefully turning the steam release to the venting position
- Step 9 Serve with a squeeze of lemon juice
