Ingredients

• some olive oil
• 2 chopped sweet potatoes, 1 inch diced
• 1 Tbsp chili powder
• 1 tsp cumin
• some salt
• some pepper
• 8 oz mushrooms, thinly sliced
• 0.5 red onions, sliced
• 2 ears sweet corn
• 1 Tbsp garlic
• 1 can black beans, drained
• 8 corn or TJ's Jicama tortillas
• some feta cheese (optional)
• some cilantro (optional)
