Spinach Orzo Salad Recipe | Veggie Fest

Ingredients

• 1 cup orzo, cooked
• 1 12-ounce bag spinach, torn or cut
• 1 small red pepper, chopped
• 1 small cucumber, chopped (peeled and deseeded, optional)
• 1 cup halved cherry tomatoes
• 7 ounces feta cheese, crumbled or cubed
• 5 ounces sliced green olives
• 5 ounces sliced kalamata olives
• ½ cup olive oil
• 1 lime or lemon, juiced (about 2 tablespoons)
• 1 ½ teaspoons oregano
• Salt and black pepper to taste
