Ingredients

• 1 1/2 cups frozen corn, thawed
• 1 can black beans, drained and rinsed
• 1 1/2 cups chopped grape tomatoes
• 1/2 cup minced red onion
• 1/4 cup minced fresh cilantro
• 2 avocados, chopped
• Dressing:
• the juice of one lime (approx. 3 Tbsp.)
• 2 Tbsp. olive oil
• 1 Tbsp. red wine vinegar
• 1 tsp. salt
• 1/2 tsp. pepper
