Ingredients

• ¼ cup (60 ml or 1/2 stick) of Canadian butter
• plus more for greasing the pan
• 1 onion
• thinly sliced
• 1 tsp (5 ml) salt
• ¼ tsp (1 ml) pepper
• ¼ tsp (1 ml) cayenne pepper
• ¼ tsp (1 ml) thyme
• 5 cloves of garlic
• smashed and minced
• 6 tbsp (90 ml) all-purpose flour
• 4 cups (1 L) Canadian heavy cream
• ½ cup (125 ml) Canadian Parmesan cheese
• shredded
• 4 lbs (1815 g) russet potatoes
• peeled and sliced into 1/8-inch rounds
• 3 cups (750 ml) of Canadian cheddar cheese
