- 1 small onion (finely chopped)
- 3-4 tablespoons ginger (cut in very thin strips (use 4T for more ginger flavor))
- 5 cloves garlic (finely chopped)
- ½ lb pork belly or pork shoulder (cut into small cubes*)
- ⅓ cup Bagoong alamang (sauteed shrimp paste (regular)***)
- 5 or more red thai chilies (chop some, if desired)
- Patis (Fish sauce or salt, to season)
