• 4 trout fillets
• salt and pepper to taste
• 1 c. all-purpose flour
• 2 Tbsp. olive oil
• 6 Tbsp butter
• 1 lemon, segmented and finely chopped
• 2 Tbsp. fresh lemon juice
• 1/4 c. flat-leaf parsley, finely chopped
• 2 slices good-quality white bread, cut in I/8-inch cubes
