Ingredients
- 225 g (8 oz) wide dried rice noodles
- 1 teaspoon sugar
- 175 g (6 oz) fresh beansprouts
- 1 teaspoon dried chilli flakes
- 2 large fresh red or green Thai chillies, seeded and chopped
- 2 tablespoons fish sauce
- 3 tablespoons finely sliced shallots
- 1 tablespoon lime juice
- 3 tablespoons coarsely chopped roasted peanuts
- 3 spring onions, sliced on the diagonal
- 2 tablespoons groundnut (peanut) oil
- 3 tablespoons coarsely chopped garlic
- 450 g (1 lb) raw prawns
- 1 tablespoon light soy sauce
- 2 eggs, beaten
- 3 tablespoons coarsely chopped fresh coriander
- 1 lime, cut into wedges
- ½ teaspoon freshly ground black pepper
