Ingredients

• 12 oz (340 g) elbow macaroni or cavatappi pasta
• 1 tbsp (15 g) salt (for the pasta water)
• 4 tbsp (55 g) unsalted butter
• 1/4 cup (30 g) all-purpose flour
• 4 cups (960 ml) whole milk
• 1 tsp (5 g) Dijon mustard
• 1/2 tsp (2.5 g) garlic powder
• 2 cups (200 g) shredded sharp cheddar cheese
• 1 cup (100 g) shredded Gruyère cheese
• 1/2 cup (50 g) grated Parmesan cheese
• 1-2 tbsp (15-30 ml) truffle oil (to taste)
• Salt and pepper to taste
• 1 cup (100 g) panko breadcrumbs
• 2 tbsp (30 g) unsalted butter, melted
• 1/4 cup (25 g) grated Parmesan cheese
• 1 tbsp (15 ml) chopped fresh parsley (optional)
