Rustic Fish Stew

Ingredients

• 1 lb. fresh tilapia fillets, cut into cubes
• 1 tbsp. olive oil
• 1 large onion, chopped
• 2 cloves garlic, minced
• 1 red bell pepper, seeded and chopped
• 1 cup zucchini, chopped
• 4 small red potatoes, cubed
• 2 carrots, cleaned and cut into cubes
• 1 tsp. fresh thyme, chopped
• 1 tsp. fresh parsley, chopped
• 1 lb. Roma tomatoes, chopped with juice reserved
• 1 cup clam juice
• 1 cup dry white wine
