Chicken Tortilla Soup

Ingredients

• 1.5 pounds boneless chicken cooked and shredded
• 1 can whole tomatoes 15 oz
• 1 can Enchilada sauce 10 oz
• 1 onion medium, chopped
• 1 can chopped green chilis 4 oz
• 1 clove garlic minced
• 2 cups water
• 1 can chicken broth 14.5 oz
• 1 teaspoon cumin
• 1 teaspoon chili powder
• 1 teaspoon salt
• 1/4 teaspoon black pepper
• 1 bay leaf
• 1 package frozen corn 10 oz
• 1 tablespoon dried chopped cilantro I leave out
• 6 corn tortillas
• 2 tablespoons Vegetable oil
• Parmesan cheese grated, for garnish
