Spinach and Artichoke Casserole - Urban Vivant

Ingredients

• 12 marinated artichokes
• 1 small onion, diced
• 3 cloves garlic, minced
• 1 lb fresh spinach, cooked and drained
• 1 can cream of mushroom soup
• 1/2 C sour cream
• 2 eggs, beaten
• 1/2 t lemon juice
• 1/4 t oregano
• 1/4 t ground black pepper
• 1 C crutons, crushed
