Ingredients

• 1 pineapple, skin trimmed
• 3 tbsp unsalted butter
• ½ cup brown sugar
• 1 orange
• CAKE BATTER
• 1 ½ cup self-raising flour
• ½ cup almond meal
• ½ cup desiccated coconut
• Pinch salt
• ½ tsp dried, ground ginger
• 3 free-range eggs
• 1/3 cup coconut oil, melted
• 1/2 cup coconut yoghurt + extra to serve
• 2 passionfruit + pulp of 3 more, to serve
