Ingredients

• 1/2 pound kale
• 1 tablespoon butter or canola oil
• 1 large onion, chopped
• 1 medium Yukon Gold potato (peeled and thinly sliced)
• 2 cloves garlic (chopped)
• 2 cups frozen peas (thawed)
• 2 cups 2% milk or non-dairy milk
• 1/2 cup fresh parsley
• 1/2 teaspoon salt (to taste)
• 1/4 teaspoon white pepper
