• 125g unsmoked streaky bacon
• 1 small onion, finely chopped
• 2 tsp finely chopped sage
• 1 tbsp finely chopped flat-leaf parsley
• ¼ tsp ground nutmeg
• ¼ tsp ground black pepper

• 375g plain flour
• ½ tsp salt
• 100g lard, cut into small pieces
• 40g butter, cut into small pieces
