Sausage, Bell Pepper and Corn Pizza

Ingredients

• 1/4 cup (60 ml) olive oil
• 1 tablespoon (15 ml) oil-packed sundried tomatoes, drained and finely chopped
• 1 teaspoon (5 ml) dried oregano
• 1 clove garlic, finely chopped
• 2 cups (500 ml) baby spinach
• 6 oz (170 g) dry sausage (chorizo or other), thinly sliced (mild or spicy)
• 1 red bell pepper, roasted and cut into thin strips
• 1 1/2 cups (375 ml) shredded mozzarella cheese
• 1/4 cup (60 ml) grated Parmigiano-Reggiano cheese
• 3/4 cup (180 ml) frozen corn kernels, thawed
• 1 recipe pizza dough
• Salt and pepper
