Sri Lankan Fried Eggplant Curry - Hungry Lankan

Ingredients

• 350 g Eggplants
• 1/2 tsp turmerci powder
• 1 tbsp cooking oil
• 1/4 cup finely chopped onion
• 2 small green chilies
• 3 cloves of garlic chopped
• 1 sprig curry leaves
• 1 small pandan leaf broken into pieces
• 2 tsp Sri Lankan roasted curry powder
• 1 tsp sugar
• 1 1/2 tsp white vinegar
• 1 tsp salt
• 1 tbsp coconut oil
• 1/2 cup thick coconut milk
• 1/4 cup water
