  • 4 tbsp. unsalted butter
  • <sup>1</sup>⁄<sub>2</sub> cup tomato paste
  • Kosher salt
  • 1 lb. ground beef
  • <sup>1</sup>⁄<sub>4</sub> cup short-grain white rice
  • 1 large yellow onion, minced (1 1/2 cups)
  • 2 tbsp. fresh basil, chopped
  • 2 tbsp. fresh cilantro leaves, chopped
  • 2 tbsp. fresh flat-leaf parsley leaves, chopped
