Ingredients

• 3 zucchini, 2-3 inches in diameter
• 1/2 cup finely chopped onion
• 1 tablespoon mince garlic
• 1 tablespoon minced jalapeno (optional)
• 1 tablespoon Mexican spice blend or taco seasoning
• 1/4 cup avocado or canola oil
• scooped out zucchini, finely chopped
• 1 pound ground chicken or turkey
• 1 egg
• 2 tablespoons chopped cilantro
• 1/2 cup bread crumbs
• 1 1/2 cups tomato sauce or salsa
• 1 1/2 cups finely shredded cheddar or pepper jack cheese
