Incredibly Moist and Easy Carrot Cake - Pioneer Sugar

Ingredients

• 2 cups All Purpose Flour
• 2 tsp Baking Soda
• ½ tsp fine sea salt
• 1 ½ tsp Ground Cinnamon
• 1 ¼ cups Canola Oil
• 1 cup Pioneer Granulated Sugar
• 1 tsp Vanilla Extract
• 1 cup Lightly Packed Pioneer Brown Sugar
• 4 Large Eggs, at Room Temperature
• 3 cups Grated, peeled carrots (approx. 5-6 medium carrots)
• 3 cups Coarsely Chopped Pecans
• ½ cup Raisins
• 8oz. Cream Cheese, at Room Temperature
• 1 ¼ cups Pioneer Powdered Sugar
• ⅓ cup Heavy Whipping Cream
• ½ cup Coarsley Chopped Pecans (To top the cake with)
