• 1 large carrot, cubed
• 1/2 diced onion
• 2 diced garlic cloves
• 1 can diced tomato
• 2 vegetarian bouillon cubes (Knorr Suiza vegetarian bouillon cubes, I use x large)
• 1 bay leaf or 1 teaspoon ground bay leaf
• 2 teaspoons cumin
• 2 teaspoons chili powder
• 2 tablespoons lemon juice
• 1 bunch fresh cilantro
• 1/2 cup diced bell pepper or nopales, optional
