Ingredients

• 2 ½ dl coconut milk
• 2 onions
• 4 garlic cloves
• 1 cm ginger
• 500 g squash
• 1 aubergines
• 400 g waxy potatoes
• 1 tomatoes
• some peppermint leaves
• 1 tbsp lime juice
• 2 tbsp peanut oil
• 2 dl vegetable bouillon
• 1 tin chickpeas
• 1 tsp salt
• 1 ½ tbsp Indian curry
• salt and pepper to taste
