Potato & Leek Soup Gelson's

Ingredients

• 2 bay leaves
• 8 sprigs thyme
• 10 black peppercorns
• 4 Tbsp unsalted butter
• 3 leeks rinsed and chopped, white and light green parts only
• 1 small yellow onion, diced
• 2 lbs Yukon Gold potatoes, peeled and diced
• 3 cloves garlic, grated
• ½ cup white wine
• 3 cups chicken stock
• 1 ½ cups heavy cream
• Salt, to taste
• 2 Tbsp chives, sliced for garnish
