- 200g of Doves Farm Organic White Spelt Flour
- 200g of Doves Farm Organic Wholemeal Spelt Flour
- 1 1/2 tbsp of mustard powder
- 4 tsp Doves Farm Baking Powder
- 1 tbsp of caster sugar
- 25g of chives, finely chopped
- 1 pinch of salt
- 100g of salted butter, cubed and cold, plus extra for serving
- 150g of mature cheddar, half coarsely grated and half crumbled into small 1 cm chunks, plus extra finely grated for the top
- 180ml of whole milk
- 1 egg, beaten
