Texas Salsa – Vince & Joe’s Gourmet Markets

Ingredients

• 1/2extra virgin olive oil
• 1/4 cup white wine vinegar
• 1 teaspoon chili powder
• 1 teaspoon Salt
• 1 pound Roma tomatoes seeded and diced
• 1 (15 ounce) can black-eyed peas drained and rinsed
• 1 (15 ounce) can black beans drained and rinsed
• 3 ears corn, roasted and removed from ear
• 1/2 red onion diced
• 1/2 cup diced green bell pepper
• 1/2 cup diced red bell pepper
• 1 cup chopped cilantro
