Torta | Mexican Sandwich With Chorizo | Gran Luchito

Ingredients

• 1 tablespoon olive oil
• 1 red onion (finely sliced)
• 150g / 5oz of Spanish chorizo
• 1 large vine tomato (diced)
• 1 teaspoon Gran Luchito Chipotle Paste
• Salt and pepper, for seasoning
• 1 avocado
• ½ lime (juice)
• 1 medium sized baguette
• 1 tablespoon of olive oil
• 2-3 tablespoons of our homemade Chipotle Mayo
• 1 tablespoon of Gran Luchito Fire Roasted Serranos
• 1 gem lettuce (wash and separate leaves)
• ½ red onion, sliced into half-moons
